TACO CASSEROLE

1 lb ground beef
1 small onion, chopped
1 C (8 oz. Bottle) Ortega thick & smooth taco sauce
1 can (4 oz) Diced Green Chiles
2 pkg (1.25 oz ea) Taco Seasoning (one regular, one hot and spicy)
2 C (8oz) shredded mild cheddar cheese, divided
Nacho flavored Doritos
1 ½ C water

Garnish: chopped tomatoes, sliced green onions, sour cream, jalapenos

Preheat oven to 375. Grease 11 x 17 baking dish.

Cook beef and onion until beef is browned; drain. Stir in taco sauce, water, chiles and seasoning mix. Cook over low heat for 3 to 4 minutes, or until thickened.

Layer broken Doritos on bottom of prepared baking dish. Cover with half of meat mixture; sprinkle with 1 C of cheese. Repeat with remaining ingredients.

Bake for 20 to 25 minutes or until bubbly

Protein Penne Casserole

3 C Cooked Whole Grain Pasta
1 pound ground turkey (grounded with:
1 diced small onion, 2 minced cloves garlic.
1 can diced tomato w/herbs.
1 package thawed drained spinach.
1 C grated mozz.
1/2 C sliced olives.

Preheat oven to 350 degrees. Combine cooked pasta, cooked turkey, onion, garlic, tomato, spinach into casserole. Top with grated cheese & olives. Cover with foil and bake 15 minutes then bake an additional 15 minutes uncovered.

HAWAIIN SALAD

1 bag miniature marshmallows
1 large can fruit cocktail, drained
1 15 oz can chunk pineapple, drained
1 can mandarin oranges, drained
1 small bag coconut
1 16 oz container sour cream
chopped walnuts, optional

Mix all ingredients together in large bowl and chill.

CHOCOLATE CHEESE FUDGE

½ lb Velveeta, sliced
1 C butter
1 tsp vanilla
1 C chopped pecans or walnuts, optional
2 lb. Confectioners sugar
½ C cocoa powder

Spray lightly the bottom of 9X2” square pan with nonsitck spray. In a saucepan over medium heat melt the cheese & butter, stirring constantly until smooth. Remove from heat & add vanilla & nuts. In a large bowl, sift together sugar & cocoa. Pour cheese mixture into the sugar & cocoa and stir until completely mixed. Mix will be very stiff. Using your hands, remove candy from bowl & press evenly & firmly into pan. Because of the amount of butter, pat the top of the candy with a paper towel. Refrigerate until firm.

BUTTERFINGER COOKIES

½ C butter, softened
¾ C sugar
2/3 C brown sugar, packed
2 egg whites
1 ¼ C chunky peanut butter
1 ½ tsp vanilla extract
1 C all-purpose flour
½ tsp baking soda
¼ teaspoon salt
13 oz bag butterfinger candy bars

In a mixing bowl, cream butter and sugars. Add egg whites; beat well. Blend in peanut butter and vanilla. Combine flour, baking soda and salt; add to creamed mixture and mix well. Stir in candy bars. Shaped into 1 ½ inch balls and place on greased cookie sheets. Bake at 350 for 10-12 minutes or until golden brown. Cool on wire racks.
